Red lentil flat bread/ wraps: One cup lentils and two cups water. Let sit overnight or no less than 3 to 4 hours. Add all to a blender with a little salt an pepper. Blend until smooth. Pancake like. Heat a "nonstick" pan or griddle. (I prefer a griddle. You can do several).
Ladle on griddle as big or as little as you like. If mixture seems a little thick you can add a small amount of water. With a pancake spatula flip to continue cooking. I made about nine with this measure. They don't stick and can easily be stored in a zip lock bag and reheated if needed.
Hello. My name is D'ayanna, affectionately known as Yaya, Yanna, or miss D. I am a self taught cook/nutritionist and exercise enthusiast. I have been a vegan for better than 30 years. Prior to that I was a vegetarian. I believe that food is medicine for the body but the thought of an animal sustaining me is not appealing in the slightest. I employ gluten free, sugar free and low carbohydrate basics to cooking and baking using unrefined ingredients. I am by the way as of this posting 72 years of age.
I am excited to share some of my favorite recipes and enthusiasm for healthy living. May you be inspired!
